CORIANDER STEM / CELERY | 1/2 TSP (CHOPPED)
CHICKEN | 200 GRAMS (ROUGHLY MINCED)
TOMATOES | 1 TBSP (CHOPPED)(OPTIONAL)
CABBAGE | 1/4 CUP (CHOPPED)
CARROT | 1/4 CUP (CHOPPED)
CAPSICUM | 1/4 CUP (CHOPPED)
CHICKEN STOCK | 1 LITRE
LIGHT SOY SAUCE | 1 TBSP
DARK SOY SAUCE|1 TBSP
VINEGAR | 1 TSP
SUGAR | A PINCH
WHITE PEPPER POWDER | A PINCH
GREEN CHILLI PASTE | OF 2 NOS.
SALT |TO TASTE
CORN FLOUR | 2-3 TBSP
WATER | 2-3 TBSP
EGG | 1 NOS.
FRESH CORIANDER | SMALL HANDFUL (CHOPPED)
SPRING ONION GREENS SMALL HANDFUL (CHOPPED)

Method of making
today, I’m making Chicken Manchow Soup.
& it’s quite easy to make.
Meaning the prep involved is exhaustive, but once all the prep is done, then it gets ready quite quickly.
Today, I’m going to show you- How to make Restaurant style Manchow Soup at home.
Let’s see how this soup is made.

So heat up a wok nicely.
Once your wok is hot, then add 1 tbsp oil to this.
After adding the oil, add 1 tsp chopped ginger, 2 tbsp chopped garlic, 1/2 tsp chopped celery or coriander stems, Now, stir these things well & you have to sauté the garlic & ginger for just 1-2 minutes.
So, here, I have 200 grams roughly minced chicken, I’ve just minced the chicken with a knife.
Add it & stir it well to cook.
Keep in mind that since you are cooking the mince keep stirring & separating the bits else it’ll become a clump.
So, cook the chicken for 2-3 minutes while stirring.
Minced chicken like this tastes really good in Manchow Soup.
You can see, that I’ve cooked the chicken for 2-3 minutes.
Now, we have to add some vegetables to it.
I’m adding 1 tbsp tomatoes, this is optional though, Along with it, 1/4th cup cabbage, 1/4th cup carrot, 1/4th cup capsicum, Now, mix everything well together.
You don’t have to cook the vegetables too much, here. Just stir it well.
Now, I’m adding chicken stock to it.
So, I’ve added 1 litre chicken stock here.
You can even add hot water instead of chicken stock, But chicken stock will give a real chickeny flavour to it.
Stir well after adding the stock & now bring this soup upto a boil.

After a boil, add 1 tbsp light soy sauce, I’m adding 1 tbsp dar soy sauce here, Add just enough dark soy sauce to make the colour of this soup dark brown.
So, accordingly adjust the soy sauce.
Along with it, add 1 tsp vinegar, a pinch of salt, 1 pinch of white pepper powder, I’m adding paste of 2 green chillies. You can adjust the heat as per your preference.
& also add salt to taste.
Add less salt, as even soy sauce is salty.
Stir everything very well, Now, to thicken the soup, I’m making a slurry.
To make the slurry, into a bowl, take 2-3 tbsp corn-flour, & add 2-3 tbsp water & stir well.
So that you will get a slurry like this.

Now gradually pour the slurry into the soup, & keep stirring continuously.
Add just enough quantity of slurry to thicken the soup, & you can adjust the consistency of the soup, as per your preference.
In total, I’ve used 3 tbsp corn-flour here, to thicken my soup.
So, you can see, that the soup has nicely thickened.
Now, break an egg into a bowl & whisk it.
Once whisked, pour the egg in a thin stream like this in the soup.
Don’t stir immediately after adding the egg otherwise it’ll form thin strand of egg.
Just lightly stir like this.

The heat of the soup, will help cook your egg.
& like this you will get beautiful strands of egg.
Stir it nicely & your soup is almost ready.
Now, I’m just tasting it for seasoning & heat.
You can adjust at this stage. I think both seasoning & chilli are perfectly balanced.
Now, lastly, to this add some freshly chopped coriander leaves, & add some freshly chopped spring onion greens.
Stir it well.

So, it’s quite easy to make ‘Restaurant style Chicken Manchow soup’ at home.
The prep may seem exhaustive, But it tastes really incredible.
& if making at home, you can make it in a large batch & leisurely enjoy the soup.
You can enjoy it as a one pot meal, & it’s very comforting in the rains.
About the chicken stock that I’ve used, For that, boil the chicken bones nicely for 1-1.5 hours, & use the stock from that.

So that your soup will become quite healthy too.
So try using the stock, it also gives a really nice flavour.
Now, it’s necessary to add fried noodles on top of Manchow Soup, Let’s quickly made fried noodles. Let’s see how they are made.
So, here, I’ve boiled & fried some noodles. You can boil & fry as many noodles as you like.
Heat up the oil, & slowly add boiled noodles to the oil in small batches.
Take a wide wok to fry coz as soon as you add the noodles to the oil, it’ll instantly bubble up.
& it can spill over, so be careful.
So, add noodles in small batches.

Once you’ve added the noodles, don’t stir it. Just let them fry like this on high flame.
Until the noodles settle.
Once your noodles settle like this, then, using tongs, you can turn them like this.
Turn them once & continue frying the noodles until they turn light golden brown & crispy.
& you can see, our noodles are fried & crispy.
Now, transfer them to a strainer & let them rest for some time.
to let it cool down & let the excess oil drip off.

Once they cool down, then you can separate them & break them into small pieces.
& our fried noodles are ready.
So fried noodles also get ready like this easily.
Another way to do it is sprinkle some corn-starch on boiled noodles & fry them too.
So, now both our things are ready.

So our Manchow Soup has turned out really delicious & is totally restaurant style.
