
CHICKEN TORTELLINI RECIPE:
10 oz of Chicken Breast cut into chunks (could be chicken thighs or even sausage)
Olive Oil
2 Zucchini, cut into bite size pieces
1 Yellow Squash, Cut into bite size pieces
1 Red Bell Pepper, cut into chunks
3 Cloves of Garlic, minced
Handful of Cherry Tomatoes, halved
1/4 cup of Pesto
Pinch of Hot Pepper Flakes or Teaspoon of Calabrian Chili in oil
Salt and Pepper to taste
Pinch of Garlic and Herb Seasoning
10oz of Fresh Cheese filled Tortellini

we are going to make a really delicious May entree for your summertime table we’re doing a pesto chicken veg tortellini situation that you are going to love it’s versatile it’s easy and you can use any protein that you like really I’m using chicken breast because that’s what was on sale but you can use sausage you can use chicken thigh boneless skinless you could do anything you want in a large Skillet I’m going to add a little bit of olive oil I also have a pot with some water coming up to a boil to this I’m going to add some chicken breast now I’m going to just season my chicken breast with a little garlic and herb seasoning because I’m going to add some cabin chilies and some homemade pesto and
fresh garlic and it’s going to get a lot of really delicious flavor that way but to my chicken I just want to kind of keep it simple oh no that means I have to wash my board um I just want to keep it simple because there’s a lot of flavor that’s going to be going on so I’m going to add the chicken in don’t worry if it’s not screaming hot just yet it’s getting there I’m not that concerned okay I’m going to let that just kind of start to sizzle and grab some color I’m just going to clear my board really quickly and then we’ll chop up some vegetables chicken’s just about fully cooked through I’m doing this all in batches so that nothing gets like overcooked or steamed or anything like that in that same Skillet it just needs like a teeny tiny bit more olive oil not much I’m adding in some zucchini yellow squash and a half of the bell pepper but

again that is all up to you that’s really all to taste it’s whatever veggies you want to use whatever veggies you’ve got you know maybe you’re doing a garden we lost a piece of zucchini it’s okay at the time at the moment we have so much zucchini and um squash is coming in and it’s just a beautiful sight I am chopping up some garlic and I’ve got my tomatoes I just have a handful of cherry tomatoes that I’ve haveed and I’m just going to keep them aside I’m going to add them in very last minute while I add when I add pretty much everything else oh by the way speaking of this is only going to take four or five minutes I don’t want to cook them to death so when we have about four or 5 minutes left I’m going to drop in my fresh talini these are cheese talini these are from
the Fresh section of the grocery store use any that you like um this is just what I’m using and once these are about where I want them I’m going to take them out but I’m going to flavor them first dropping in that garlic look how good that looks now you could just add a pinch of hot pepper flakes but I’ve been loving this this is actually from William Sonoma when I did my book tour I did a little bit of shopping there and I bought this on a whim and it’s probably the best calaban chili um collabor and chilies and oil con condiment that I’ve ever tried it’s one of the definitely one of the best ones they actually have good flavor it’s not just heat you know what I mean add a little bit of that in there just grabbing a clean oh yeah that instantly smells fantastic adding the chicken back in beautiful dropping that so canini right in that’s just going to take a few minutes until it floats to the top and then we add it all in with a nice spoonful of some homemade pesto my basil is

already going wild okay I’m already having to make pesto on a weekly basis because it’s just growing like crazy but look at how beautiful that is like that already looks so so scrumptious to me I cannot wait to dive in once that tortellini is ready we’ll add it in along with the Tomato some fresh basil some it’s going to be great going to be Greatful at that that looks gorgeous put some fresh tomato to in there and then lovely bit of flavor with some homemade pastel you can really just do as much or as little as you like I say about a/4 cup because I don’t want this to be like the only thing that you taste is pestel you know what I mean I want it to have really gorgeous flavor and now I’m just going to cook it all together for literally a minute really no longer than that look at those colors look at that you know it’s going to be gorgeous you
know there’s going to be great flavor I love it I love it that’s pretty much it I mean it is done we have everything you’ve got your protein you’ve got your carb B really good flavor so hot to me this is a really great thing you can put the whole Skillet on the table all you need is a simple green salad a baguette uh some white wine a Seltzer whatever you like to drink a tall glass of lemonade and you have got summer at your table and I love that because I love recipes like this that are really like fuss-free but they just bring everything to life you know it’s like everything in here when you look at it it just screams joy and color and summer and happiness and that is my favorite thing go Laura inth kitchen.com for the written recipe hope you enjoy spending time with me and I will see you in the next one
