
How to Make Salsa Chicken and Rice
Ingredients
1 tablespoon olive oil
4 chicken breasts (about 3 ounces each)
1 tablespoon taco seasoning
2 bell peppers (I use red and green) chopped
1 1/4 cups long grain white rice
3 cups chicken stock
1 cup fat free salsa for the rice
1 1/2 cups fat free salsa for the chicken
1/2 cup shredded cheddar cheese
chopped cilantro and sliced jalapeños for serving optional

Method of making
Today on the channel, we’re making one of our family’s absolute favorite easy weekn night meals. This easy baked chicken, salsa, and rice recipe. It’s a simple meal you can throw together with just a few basic ingredients, and it bakes up in under an hour for your family to enjoy. We’ll start by seasoning four chicken breasts with some taco seasoning. Be sure to pat down the chicken breasts and then add a little bit of olive oil onto them so that the seasoning sticks. And if you prefer, you can actually brown these in a pan ahead of time to get a little bit of caramelization on them, which will create some flavor, but it’s not an absolutely necessary step. And so, if you’re looking to save time, then you can easily skip that and just add them to the pan with all the other ingredients. Choose an oven safe pan for this recipe. We like this cast iron one and add three cups of chicken stock to it along with some chopped bell peppers.
You can use green or red or yellow or any kind that you like or that you have on hand. And next, add one cup of fat-free salsa. Be sure to choose a variety of salsa that your family enjoys as it’s going to impact the flavor of the finished product of this recipe.
Now, I like to add another tablespoon of taco seasoning to this mixture. It really helps to season the rice and create a little bit more of a spicy kick, but you can feel free to leave it out. You can add 1 and 1/4 cups of long grain white rice to this mixture and stir everything together very well. And then at this point, you can feel free to add some canned or frozen corn, some

black beans if you wish, or you can even add some more veggies. And then nestle the chicken breasts into the rice and the liquid. And then top each chicken breast with a little bit more salsa so that the chicken breasts are covered. And once you finished adding the salsa, add the lid to the pan. And then you’re going to bake it for about 40 minutes at 370° F. This is going to cook the rice and cook the chicken breasts through. At this point, add about half a cup of shredded cheddar cheese. Try and get it on top of the chicken breasts if you can. And then you’re going to return the pan to the oven again at 375° for about an additional 10 minutes or so, just until the cheese is melted and caramelized. And then you can add some chopped cilantro or parsley on top if you wish. And there you have it.
In under one hour, you have a delicious meal with tender chicken breasts, perfectly cooked rice, and tons of flavor. We really hope you love this recipe
