Mint leaves chopped – 2tbsp

For Garlic Chilli Sauce –
Mayonnaise – ½ cup
Cheese spread – ¼ cup
Garlic chopped – ½ tsp
Milk/water- 3tbsp
Chilli flakes – 1tbsp
Kasoori Methi Powder – a pinch

Burger buns – 4nos
Butter – 4tbsp
Mustard sauce – 2tbsp
Tomato slice – 4nos

Method of making
Burger is not just a dish, it’s an universal language.
Yes, you can find burger in every country.
And India has the most varities of veg burgers that you can’t find anywhere else.
At the same time, the most ordered and loved non veg burger is chicken burger.
Which can be made in many ways.
There are 2 types of chicken burger.
One way where you crumb and fry the boneless piece and then add it, the other fun way is where you use chicken mince.
Today, using chicken mince, we’ll make a tasty, juicy chicken burger.

To make the burger, the chicken keema we need is the best when you use chicken leg.
However, chicken legs shrinks after cooking but stays the most juicy which means the patty of the chicken burger won’t be dry.
I’ve chicken leg mince here and all the things I’ll be adding are the same ones used in chicken seekh kabab.
So just imagine that the spices of sheekh kabab in chicken burger.
It’ll be good and tasty.
So, this is chicken mince and in goes chopped ginger, chopped garlic, salt, some chilli flakes, you can use chilli powder if you want, chopped green chillies, grated cheese, What happens is that meat gets dry after getting cooked, to keep it moist, you can add some cheese to it.
In goes some garam masala, mint leaves, crushes, like this, it’ll add freshness to it, and it also counters the meaty flavor.
In goes coriander leaves, and now we’ve to mix it well.
There’s no need to add any binding, it’s perfectly okay.
That means, no need to add bread crumbs or egg.
In fact if you stick this to sheekh or cook it in a pan or oven, or in a tandoor, then you’ll get great sheekh kabab.Now, add a dash of oil.
Again, adding oil in this stage keeps it moist.
It has been mixed well, now, we’ll make it’s patties.

Take the mixture, and give it a round shape, make sure there are no cuts and cracks in it.
Just roll it.
And then pat it.
And the size of the tikki should be the same as that of the burger bun.
It should neither come out of it nor be too small for it.
Same size or just a bit smaller is perfect.
Keep in mind that it’ll shrink a bit after being cooked.
It gets smaller, so keep it a bit flat because after shrinking it’ll rise up a bit too.

The main thing while making chicken burger is the chicken patty.
If that is tasty, juicy and flavorful, then the rest will be alright.
If it’s not a good quality chicken or the spices aren’t enough then it won’t be as good.
Look at that. Now, we’ve to cook the patty.
Heat the pan and add oil to it.
Now, we’ve to wait. Sometimes, we get impatient and add the patty or non veg stuff, we shouldn’t do that. If we add it now, then the chicken will become dry.

The pan has to be hot, so that the top layer gets cooked, we call it searing so when it gets cooked till the inside, it stays juicy.
Pan is hot, we’ll add the patty. Again, I’m flattening the patty since I know it’ll shrink up a bit after getting cooked.

See, whenever we cook chicken, it’s patty, breast or slice, we shouldn’t press it much. The more you press, the drier it’ll become.

Now let’s go towards the tips and tricks where we’ll get to know about the things to keep in mind while making chicken burger.
Whenever you’re using minced chicken, make sure it is made in front of you so that you know it’s fresh.
It’s best to take the mince of chicken legs because it doesn’t get dry quickly and we Indians love it’s taste.
When we shape the chicken into a patty, it’s size shouldn’t be more than the burger bun so make it almost the size of the burger bun, then it’ll be perfect.
Remember to keep the chicken patty extra flat when it’s raw because when it gets cooked, the protein coagulates, meaning, it shrinks.
So the thin patty will rise up once cooked and shrink form the sides.

Whenever you add the chicken patty in the pan, make sure that pan is hot, as soon as you put it in high heat, there’ll be a crust formed in both upper and lower side which means it has been seared from the outside, it has been sealed and will remain juicy on the inside, after that lower the temperature and let it cook slowly.
If you want, you can cover and cook it.
While making a burger make sure that the burger bun is not too high or else it’ll be difficult to eat.
At the same time, if we roast the burger bun a little, then the moisture doesn’t go immediately into the bread, which means the burger won’t get soggy quickly.
To hold the burger in one place you can use a big toothpick.
During a bird flu if you use chicken or poultry or eggs, then keep in mind that when you cook it, the temperature of the dish should have more than 63 degrees of temperature and heat it at that temperature for atleast 20-25 secs and then it is safe.
This way, cooking it in high temperature kills the pathogens or viruses in it.
Another thing, whenever we marinate chicken or whip an egg wash the bowl separately, because it might have bacteria, salmonella or viruses so that might get transferred to your sink or other vessels.
In fact, after that, you should wash your hands first then eat or touch anything else.
