
Ingredients:
2 pounds Uncooked boneless skinless chicken breast
4 oz Neufchatel Cheese (1/3 less fat cream cheese)
1/4 cup fat free Greek yogurt
1 1⁄4 cup Low fat Finely shredded Mexican four cheese blend
3 oz Crisp cooked bacon (or about 6 pieces)
1⁄2 cup Scallions, chopped
2 Tbsp Hellman’s Light Mayonnaise

Method of making
today’s recipe is going to be Vermillion dollar chicken now I eat a ton of chicken breasts and I like to find different ways to make that kind of creative a little less boring than just eating plain old chicken breasts so I have lots of different chicken recipes on my channel and this is just another one that I thought I would share with you guys because it is so simple to make it comes together really quickly and easily but it is absolutely delicious and it turns that boring chicken into something that is really yummy and pretty much everyone in the family will probably
enjoy eating not just people that are doing Weight Watchers so let me jump into the ingredients real quick with this and show you what you’re going to need to make it first off you’re going to need about two pounds boneless skinless chicken breasts now here I’ve got three ounces of crisp cooked bacon and this ended up being six slices now I prefer to weigh my bacon out instead of go buy slice but I just thought I’d let you know ounces is three and this time I got about six slices Carol got some low-fat cream cheese that I’ve let come to room temperature I’m going to be using half of this brick or four ounces and here I’ve got about a half cup scallions or green onions

whatever you want to call them chopped and then back here got some Hellman’s light mayo you’re going to be needing two tablespoons of that and then this time I’m using this Lucerne reduced fat Mexican style cheese blend I’m gonna be using one and a quarter cups of that and then finally you’re gonna need a quarter cup non-fat plain Greek yogurt and that is everything that’s in this let me get it started so to start off with I’m going to take my chicken breast here and I’m gonna cut them in half and that’s just so they cook a little bit quicker if I leave them whole like this it’s going to take forever for them to bake plus I like to cut it in half just so that I have the smaller
portions for easier serving so what I’m going to do this time and sometimes I just cut them in half diagonally but this time I’m going to cut them in half horizontally like that I’m gonna go ahead and do the other two and then I’ll be back now if you have smaller chicken breasts you don’t have to do this at all I should say but these are pretty big three of them equal just at the two pound Mark now that I’ve got those cut in half I’m going to take a 13 by Nine Inch casserole dish here give it a quick spray with some cooking spray and then I’m gonna lay my chicken breast and my pan all right now I’m gonna go ahead and set this aside next I’m going to take my bacon and I’m gonna give

it a quick chop just so I have kind of little pieces okay I’ve got that all chopped up so I’m going to work on the rest of this and a medium sized bowl and add in four ounces of that softened cream cheese quarter cup Greek yogurt two tablespoons for that light mayo cup of my cheese and then most of my scallions I’m gonna reserve a little bit for the top and then same thing with the bacon I’m gonna add most of this in just reserving a little bit for the top now I’m gonna just mix all of that together really well got that all mixed together well so now I’m going to take my chicken and I’m gonna just spread this as evenly as I can on the top of my chicken breast now that I’ve got that all spread on there I’m going to take my remaining quarter cup cheese and I’m going to sprinkle that evenly on the top
okay this is ready to go into my preheated oven at 375 uncovered until it reaches an internal temp of 165. and every time I do this it takes a little bit different amount of time just depending on the thickness of the chicken breast that I’m working with so I will be back once this is done and let you know how long it took all right this took just about 35 minutes and attempt checked it it is at or above 165 so it is done so now what I’m going to do is I’m going to garnish it with my remaining bacon and green onions all right now this is ready to Dish up I will go ahead and do that and let you know the points we got a serving of this which is a sixth of the total or one of those chicken breast

halves and that’s on Weight Watchers is going to be eight points which maybe a little higher than some of my other chicken recipes that I like to do but I definitely think this one is worth it because again it is just so delicious and it’s really easy to make too so I love this one it’s definitely kiddo friendly family friendly as I said in the beginning this is not something that you eat and think it’s a diet food at all because it’s so cheesy and Rich and it’s got the bacon and everything going on in it so it definitely doesn’t taste like a lightened up or lower calorie recipe it tastes very sinful and very much like it is full of just a ton of calories and points while it is not but again this is just another way I like to do chicken I hope you guys enjoyed
